1. Peking Duck (Beijing Kaoya)
Peking is an older romanization of the name Beijing and
probably most familiar through Beijing’s signature dish, Peking duck. The best Peking
duck has crispy, flavorful skin and is served with tender Mandarin pancakes, hoisin
sauce, scallion and cucumber. In Beijing, the duck will be hung in a cool room
for a day then inflated with air before roasting in a fruitwood oven. To still
get that crispy skin, duck breast is pan fried here, but the pancakes are
hand-made for that true Peking duck experience.
