When deciding which bottle to open when you have rows of patties on the grill, you first need to determine the fat content of what you’re cooking up. The fat in veggie burgers varies, but a dry rosé usually fits the bill. You can also use a light-bodied red; those, too, will pair well with lean turkey burgers. Standard beef patties (not too fatty, not too lean) enjoy a complementary medium-bodied red wine, and if you’re really packing the heat with your burgers and making them ultra-savory with add-ons like bacon, onion rings, barbecue sauce or the like, find a heavy, rich wine to go with it. Seems counterintuitive, but there you have it.
