1. Zoodles
Zoodles aren’t a new invention, but perfecting a meal based on zoodles can be difficult. There’s a certain way to cook them and endless ways of incorporating them into your dinner, so there’s definitely a learning curve. That, and you can turn lots of other vegetables into noodles -- carrots, sweet potatoes, bell peppers -- so there’s room to grow. Changing zucchini into noodle form makes you feel like you’re twirling spaghetti on your fork even when you’re just eating vegetables, and between a marinara sauce or teriyaki glaze, the “noodle” meals are endless.
